Pepper Broccoli Hash


5 baking potatoes, like russets, medium size
¼ cup olive oil
2 tablespoons butter, unsalted
1 cup onions, diced- I used a yellow onion
2 teaspoons minced garlic
1 red bell pepper, Diced- makes about a ½ cup
1 small jalapeno pepper, deseeded, finely diced- makes about 3 tablespoons
3 cups of fresh broccoli florets.
2 tablespoon dried parsley
2 teaspoons paprika
1 ½ teaspoon cayenne pepper
½ teaspoon kosher salt
½ teaspoon ground black pepper
