Persimmon Mochi

Makes 10 large mochi.

Ingredients: 

8 oz. mochiko (sweet rice flour)
1 cup water
1/3 cup white sugar
1 tsp vanilla
2 cups coconut, grated, dried and unsweetened
2 large, just ripened Fuyu persimmons, skinned and each cut into 5 equal pieces
