Pinapple Upside Down Cupcakes

Ingredients

  • 1 box yellow cake mix
  • 3 eggs
  • 1 can pinapple chunks drained, juice reserved
  • 3/4 c brown sugar
  • 1 recipe whipped cream
  • maraschino cherries
  •  

Directions

  1. Mix together cake mix, eggs, pineapple juice plus milk equal to 1 cup
  2. Divide brown sugar between all paper liners equally. Place pinapple chunks into paper liner. Top with cake batter and fill 3/4 full
  3. Bake at 350 for 15-18 minutes or until cake springs back.  Immediately flip each cupcake over onto a large platter and remove paper liner carefully
  4. Serve with whipped cream and garnish with a cherry
  5.
