Notes: 

First, I cut this in half to serve 2. Next -and most importantly- I changed the cheese from cheddar to, well, almost anything else. E.g., Sargento's 6-cheese Italian blend of Mozzarella, Provolone, Parmesan, Fontina, Romano & Asiago.

Ingredients: 

1 pita bread, split horizontally
1 1/2 Tablespoons EVOO
1/4 teaspoon dried oregano
1/2 cup Italian cheese(s)
Half a 12-ounce jar roasted red peppers, drained and sliced
Half a 6-ounce jar artichokes hearts, drained and cut in half or sliced
1/8 cup roasted almonds, chopped
