Plum and Quinoa Salad

Ingredients: 

1/2 cup dry quinoa, cooked and cooled
1 tsp oil
dash of salt
2 plums, cut into wedges
1 tsp sugar, brown or white
dash of cinnamon
2 tsp butter, salted or unsalted
2 cups arugula
1/4 cup pistachios
1 oz goat cheese, crumbled

DRESSING INGREDIENTS
3 tbsp pomegranate juice, roughly one small pomegranate
1 tbsp lemon juice
1 garlic clove, minced
4 tbsp olive oil
1 tsp maple syrup or honey
1 tsp sweet balsamic vinegar
dash of salt
