Pomegranate marinated olives

Ingredients: 

1/4 cup Pomegranate juice
1/4 cup Pomegranate molasses
1/4 cup Honey
1/2 cup Olive oil
Lemon juice (1 medium lemon)
1 Tbs dried tarragon
1/4 cup chopped pecans/walnuts
2 Tbs chopped Parsley
2 Tbs chopped Garlic
10 oz jar of olives (drained)


1. Drain olives of the brine and replace with clean water to purge some additional salt from the olives. Let sit one day and then drain off the water. Place olives in a medium sized sealable container
2. Mix together pomegranate juice, pomegranate molasses, honey, and lemon juice.
3. Add tarragon and garlic. Mix well
4. Drizzle in olive oil while mixing
5. Add pecans/walnuts
6. Pour mixture over olives and stir and seal
7. Refrigerate olives for 1 day for flavors to meld occasionally tossing
