  • 2 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon table salt
  • 1 cup all-purpose flour
  • 1 Tablespoon unsalted butter, melted


  1. In a large measuring bowl (4 cup), whisk eggs until completely combined, and then stir in milk and salt.
  2. Stir in flour until slightly lumpy, but otherwise combined.  Add butter and beat until smooth.
  3. Let the batter sit, covered for 30 minutes to an hour.
  4. Preheat oven and popover pan to 475F.
  5. Remove pan (and close oven) and quickly pour batter about 1/3 cup into each mold.  Return pan to the oven right away. Bake for 15 minutes.
  6. Turn heat down to 350F and bake another 25 minutes. Serve immediately.

Tips / Substitutes:  If you are in a hurry, you can ignore the resting of the batter, but you will have to whisk more.

When baking, do not open the door until the baking process is complete.  If you open the door, it will let out the heat and reduce the rise.

Servings: 6 popovers (one serving for some of us)
