Pork, Pancetta and Winter Veg

Right. It’s weather like this makes you realise men have nipples to…it’s freezing!! And as such the table you come home to from what ever it is you do should reflect that..ie it should be piping hot and full of hot food that makes you feel a duvet has just been draped around you!

Pork is a brilliant, brilliant meat…possibly my favourite (this week), get good hearty cuts, go to a butchers and get them to cut the meat for you, ask him to be ‘generous’ with the knife and if you become a regular you will access all kinds of perks – my butcher regularly throws me kidneys and hocks for nothin’!!

This isn’t a world beating dish, it isn’t anything out of the ordinary but it’s pretty quick and perfect for a Monday evening when you can’t feel your nose…..and/or nipples.

Ingredients: 

For 2
2 big ass loin chops, boned in, at least 1 inch thick
Chopped pancetta (or smoky bacon)
1/2 glass white wine
2tps Dijon mustard
1 tps paprika
Stock at hand
1tbs creme fraiche
