Artichoke Dip Layer:
2 (14 oz) jars marinated artichokes
5 cloves roasted garlic*
6 ounces cream cheese, softened
1/2 cup mayonnaise
1 cup freshly grated Parmesan cheese (use Parmigiano-Reggiano for the best flavor)

Spinach Dip Layer:
10 ounces frozen spinach, thawed
1 can water chestnuts
2 ounces cream cheese, softened
3/4 cup sour cream
1/2 cup mayonnaise
2 tablespoons grated Parmesan cheese
5 cloves roasted garlic*
1/2 teaspoon salt
1/2 teaspoon lemon juice
1/2 teaspoon onion powder
2 ounces blue tortilla chips
