Potato filled with Smoked Chicken and Mango Salsa

Yield 4
Prep Time: 15 minutes
Cook Time: 20 minutes


4 large potatoes
20 ml sesame oil
4 smoked chicken breasts
1/2 large mango, small chunks
1/2 red onion, chopped
1/2 red pepper, chopped
1 clove garlic, crushed
30 ml chopped coriander

  1. Clean and prick potatoes. Cook in microwave on high +- 20 minutes. Allow to cool, cut in half lengthways and brush with oil.
  2. Cut the smoked chicken into thin slices and place them in potatoes.
  3. (salsa) Combine remaining ingredients and season with salt and ground black pepper. Top potato with a heaped spoon.
  4. For a spicy salsa add a chopped chilli.
