Pronto Enchilada Bake

Ingredients: 

2 lbs ground turkey
1 onion – chopped
2 cloves garlic – finely chopped (garlic salt ok)
2-4 tbsp chile powder
1 tsp leaf oregano
1 ½ - 2 tsp salt
½ cup flour
4 cups water
1 dozen corn tortillas
1 cup sliced pitted black olives
2 cups cheddar cheese


 

In a large skillet, brown ground turkey, onions, and garlic. Drain. Add chile powder, oregano, salt and flour to meat. Mix well. Add water. Simmer until mix thickens about 5 minutes, stirring occasionally. Place 3 tortillas in ungreased 13 x 9 baking dish. Cover with 1/3 turkey mix. Top with ¼ cup olives and ½ cup cheese. Repeat in layers. Bake at 350 degrees for 30 minutes or until hot. Yield: 6 servings
