protein salad + balsamic tofu

Ingredients: 

tofu:
1 454g block of firm to extra firm tofu, pressed (great instructions for pressing here)
1/4 cup balsamic vinegar
2 tbsp olive oil
1 big clove of garlic, minced
handful of chopped herb of your choice (I went with basil)
salt and pepper

salad:
salad greens for 4 people (about 2-3 cups per person)
1/3 cup extra virgin olive oil
3 tbsp balsamic vinegar
salt and pepper
1 cup cooked chickpeas
1 cup cooked quinoa
2-3 medium tomatoes, cut into wedges
big handful of pine nuts (toasted if you like)
