Pulled Pork Sandwiches

For the pulled pork:
2.5-3 lbs pork shoulder
1.5-2 bottles dark beer
1 bottle Stubbs Hickory BBQ sauce

For the cole slaw: (could use improvement)
1 bag cole slaw mix
1/4 c red wine vinegar
1/4 c EVOO
1 T Dijon mustard
Salt and pepper

Kaiser rolls
Dill pickles
Arizona heat mustard

Trim as much fat as possible from pork shoulder. Place in 2.5 qt slow cooker and cover with beer. Cook on high for 3 hours and low for 1 more hour (ish).

Lift pork out of slow cooker with forks and dump out beer. Shred meat with forks and return to slow cooker. Pour majority of bottle of BBQ sauce over pork and mix gently.

Whisk cole slaw dressing ingredients and toss with half of the bag of cole slaw mix.

Toast kaiser rolls. Top with pulled pork, cole slaw, dill pickles and Arizona Heat.
