Pumpkin Chili


3 tbsp olive oil
3 cloves garlic, minced
1 onion, diced
2 small jalapenos, finely chopped
28 oz canned whole tomatoes, undrained
1/4 cup tomato paste
3 cups vegetable broth
2 tbsp lemon juice
4.5 cups cooked beans (my Mom used 1 19-oz can of mixed beans and one 19-oz can of red kidney beans)
1/4 tsp cinnamon
1 1/2 tsp smoked paprika
2-3 tbsp chili powder, to taste
1 3/4 cup pumpkin puree
1/2 cup TVP
2 tsp fine sea salt, to taste
