1 can evaporated milk
3 eggs
3/4 cup light brown sugar, packed
1 tbsp cornstarch
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
1/2 tsp vanilla
1 oil-based crust
Make crust, poke holes in bottom, and preheat oven to 400 degrees.
Combine pumpkin, light brown sugar, cornstarch, spices, eggs, and evaporated milk and whisk.
Put pie pan on a rimmed sheet pan. Bake crust for 10 minutes. Remove and cover edges with foil.
Reduce oven temperature to 350 degrees. Bake until all but centers are set, 40 to 50 minutes. Let pies cool completely.
Cut into wedges, and serve with whipped cream.
