Pumpkin Risotto

*I used un-spiced apple cider. If you use spiced, taste the arborio before adding any cinnamon. **I used canned pumpkin puree. You can use freshly roasted pumpkin as well.


3-1/2 cups low-sodium chicken broth
½ cup full-fat coconut milk
2 cups unsweetened spiced apple cider*
4 ounces Chef-Style Chopped Prosciutto
2 tablespoons olive oil
½ yellow onion, finely chopped
4 cloves garlic, minced
2 cups arborio rice
¼ teaspoon ground sage
1/2 teaspoon ground cinnamon
1/8 to 1/4 teaspoon red pepper, optional
1 teaspoon sea salt
1 cup bourbon
1 ½ cups pumpkin puree**
3 tablespoons pure maple syrup
2/3 cup crumbled goat cheese, plus more for serving
