Puréed Parsnips

Ingredients: 

2 lbs parsnips, peeled
3 Tbsp olive oil
1 1/2 cup water
1/2 teaspoon nutmeg
Sea Salt


Directions

  1. Preheat oven to 400
  2. Peel parsnips.  Cut a slim piece off the fat end of the parsnip. Identify the inner core, and remove by cutting around it. This core can lead to crunchy bites later, so you want it all removed.  Chopped remaining part of parsnip (about 1 1/2 pounds after removing cores).
  3. Place chopped parsnips in roasting pan or cast iron pan.  Add oil.  Mix to coat parsnips. a medium sized bowl, add the melted butter and stir to coat.  Roast in the oven for 25 to 30 minutes, at 400°F, until lightly golden, turning the parsnips once half-way through the cooking.
  4. Put cooked parsnips into a blender or food processor. Add nutmeg and salt. Add 1 1/2 cups water, and pulse until puréed to the desired consistency. Add nutmeg and salt  to taste.
