Quick Satay Skewers

500g boneless, skinless chicken thighs or breasts, cut into 1-2cm pieces

½ teaspoon ground turmeric

½ teaspoon ground cumin

½ teaspoon ground coriander

1 teaspoon brown sugar

2 teaspoons oil

10 bamboo skewers (if you have them)


¼ cup peanut butter (crunchy or smooth)

1/3 can coconut milk (or coconut cream thinned out with a bit of water)

1-2 tablespoons sweet chilli sauce

½ clove garlic, finely minced

1-2 teaspoons finely grated fresh ginger

1 tablespoon lemon or lime juice (or 1 teaspoon vinegar e.g. rice or white vinegar)

2-3 tablespoons water
