Quinoa Black Bean Burrito Bowls

Ingredients: 

1 cup quinoa
1 tbsp olive oil
1/4 cup minced onion
1 clove garlic, minced
2 cans (15 oz each) black beans, rinsed and drained
1/4 cup chopped fresh cilantro
1/4 tsp chili powder (mild) -OR- Pinch cayenne (spicy)
1/4 cup fresh lime juice
1 cup shredded lettuce
Salt

Optional toppings:
Grated cheddar or jack cheese
Sour cream or Greek yogurt
Pico de gallo or salsa
Diced seeded tomatoes
Hot sauce
Sliced avocado or Guacamole
Corn
Ground beef or grilled chicken
