Quinoa 'Risotto' with Toasted Hazelnuts and Dried Currants

Ingredients: 

1/2 cup hazelnuts
1 tablespoon olive oil
1 small onion, diced
1 cup quinoa, washed in cold water and drained
2 cups chicken stock, divided
1 bay leaf
1 tablespoon ground cinnamon
1/2 cup dried currants (dried cranberries or raisins also work)
salt and black pepper
2 tablespoons unsalted butter
