Serve 2

100 grams cous cous
150 grams courgette chunked
150 grams aubergine chunked, salted and left in a sieve
1 carton of good tomatoes
100 grams of raw prawns
100 mils chicken stock
3-4 cloves garlic minced
2 cap-fuls of white wine vinegar
big squirt of tomato paste
little squirt of ketchup
Splash of white wine
