Raw Coconut Mocha Pudding with Kefir Whip

Velvety smooth, delicious, and nutritious all at once! This recipe was discovered by accident when I tried to make a smoothie and store it for the morning after, only to find it had thickened to the consistency of pudding. It's much creamier and richer than store bought soy pudding, and very satisfying. The kefir whip is light, sweet, and healthy, too!

1 ripe avocado, peeled and pitted
1 ripe banana, peeled
1/8 cup unsweetened cacao powder, preferably raw
1/8 cup cocoa powder
2 cups coconut cream
1/4 teaspoon pure vanilla extract
1 cup strong organic coffee, well filtered and chilled
5 dates, or xylitol to taste if avoiding sugar

8 oz sugar free coconut kefir
1/4 C xylitol, blended fine
