Red Lentil and Amaranth Protein Patties

Ingredients: 

1/2 cup amaranth, (uncooked)
1/2 cup red lentils (uncooked)
2 cups water
1 medium russet potato, grated
1 small onion, chopped
2 garlic cloves, chopped
1/2 cup parsley, chopped
1 Tbsp nutritional yeast (optional)
1 Tbsp mustard
2 Tbsp ketchup
2 Tbsp rice flour (or wheat flour)
2 Tbsp coarse cornmeal (or regular)
1/2 tsp cumin
1 tsp paprika
1 tsp sea salt
1/2 tsp black pepper
1-2 Tbsp neutral oil (avocado, grape seed, canola)
