Red Lentil and Sweet Potato Hummus


2 tablespoons extra virgin olive oil, more for garnish
1 yellow onion, chopped
2 cloves garlic, chopped
1 medium sweet potato, peeled and cut into 1/2-inch cubes
1 teaspoon ground cumin
1 teaspoon sweet paprika
3 1/2 cups water
1 1/2 cups red lentils
1/4 cup white miso
1/4 cup lemon juice
1/2 teaspoon sea salt
1/2 teaspoon pepper
Chopped fresh cilantro, for garnish (optional)
