Red Wine + Goat Cheese Risotto with Caramelized Mushrooms

Notes: 

* serves 4
* Steamed asparagus might be good in place of the mushrooms
* Would be delicious alongside a roast

Ingredients: 

2 tablespoons olive oil

2 tablespoons unsalted butter

3 garlic cloves, minced or pressed

1 1/4 cups arborio rice

1 cup of your favorite red wine

3-4 cups low-sodium chicken stock

6 ounces goat cheese

3 cups sliced mushrooms

1/4 teaspoon salt

1/4 teaspoon pepper

fresh basil for topping
