Rice & Beans

1 tablespoon Wildtree Natural Grapeseed Oil
1/2 onion, diced
1 cup rice
2 cups vegetable stock
1 (8 ounce) can tomato sauce
1 1/2 tablespoons Wildtree Taco Seasoning
1 (15.5 ounce) can black beans, drained and rinsed
1/2 lime, juiced
1/4 cup cilantro, chopped
1 tomato, diced
1/2 avocado, diced

Heat Natural Grapeseed Oil in a large nonstick skillet over medium heat. Add the onion and saute for S minutes.

Fold in the black beans and lime juice. Continue cooking over low heat until beans are heated through.

Add the rice, vegetable broth, tomato sauce, and Taco Seasoning. Bring mixture to a boil. Cover, reduce heat to low, and simmer 15-20 minutes or until rice is tender. Stir occasionally. If the liquid is absorbed before the rice is tender; add 1/2 cup water at a time as needed.

Serve rice and beans with cilantro, diced tomato, avocado, and any other desired toppings.
