Rice Cake (Mochi) Doughnut

120g of plain flour
5g of baking powder
(or, 125g of self-raising flour)
25g of sugar
1 rice cake, diced
70ml of milk
vegetable oil, for frying
sugar, for decoration

  1. Put the rice cake and milk in a bowl and microwave it for 2 minutes (600W).
  2. Add flour and sugar to the milk little by little and make it into a dough.
  3. Make 6 ring-shaped dough.
  4. Heat oil (1cm thick) on a frying pan. Fry the doughs with low heat.
  5. Coat them with sugar.
