Rick Stein’s Breakfast Bhaji

A great potato and carrot dish served with eggs and toast for breakfast. Very indian inspired.


250 g potatoes, peeled and cut into 1½ cm cubes

250 g carrots, cut into 2 cm x 1 cm batons

50 ml vegetable oil

2 tsp black mustard seeds

1 medium red onion, finely chopped

1 tsp Kashmiri chilli powder

½ tsp turmeric

2 tomatoes, chopped

½ tsp salt

1 tsp garam masala

50 ml water

To serve:

4-6 free-range eggs, fried

Indian breads (naan) or toasted sourdough
