Rioja Meatballs


There’s something really comforting about balls of meat in a rich sauce served with a mountain of Spaghetti……unless you’re Vegatarian and you don’t like pasta (note: Redders, I’ll have some Veggie stuff coming asap!)

My mate Mick the Boneman came round and we got stuck into these babies shooting the breeze about the finer points of naked actors in baths of jelly ( a film he wrote…not a personal fantasy).


For the meatballs:
250 grams of beef mince
250 grams of sausage meat
1/2 red onion finely diced
2 cloves of garlic minced
2 healthy squirts of tomato puree
Salt and Pepper to season
Tbs each of fresh Oregano, Thyme and Rosemary
1 egg
50grams of Parmesan grated – an optional extra, but holy moly is it worth it!

Rioja sauce:
1 medium red onion finely sliced
1 cloves garlic finely sliced
1 squirt of tomato puree
1/4 bottle of Rioja
a little chicken stock
1 can carton of chopped tomatoes
Hand full of chopped parsley
Handful of Freash basil leaves torn
