Roasted Cauliflower


1 cauliflower head, cut into bite-size pieces
1/4 cup olive oil
salt and black pepper to taste
1 1/2 cups panko bread crumbs
4 tbs (1/2 stick) butter, melted

  1. Preheat over to 400
  2. Spread cauliflower on large sheet pan and drizzle with olive oil
  3. Toss to coat, adding salt & pepper to taste
  4. Roast for 15-20 minutes, tossing once, until golden brown
  5. Add bread crumbs to a bowl
  6. Pour in the melted butter and toss with breadcrumbs to combine
  7. Place cauliflower in a medium baking dish, then mound the bread crumbs on top
  8. Roast for 5-10 minutes, until golden brown on top.
