Roasted Coconut Sweet Potatoes


Peel the apples and cut them in half.
Take out the core of the apple and cut each apple half into 8 pieces.
Place the apple pieces into a saucepan with the water and cover with the lid.
Turn the heat on to high and cook for 12 - 15 minutes until the water has gone.
Once cooked, place the apples into a jug and add the lemon juice. Liquidise using a hand blender. (Or blend in your food processor or blender).
Serve or freeze in smaller portions until needed. I also keep mine in the fridge for up to 3 days in an air tight container.


750-800 grams Sweet Potatoes
1/2 Tablespoon Coconut Oil melted
1 - 2 Tablespoons Dried Unsweetened Coconut
