Roasted Crispy Skin Pork Belly (Siu Yuk)

Ingredients: 

2 lbs of pork belly (preferrably in one large piece)
1 tsp salt (for meat rub)
1/2 Tbsp 5-Spice
1/4 tsp white pepper
1 tsp salt (for skin rub)


  1. Mix salt, 5-spice, & pepper for the meat rub
  2. Score the skin with a sharp knife.  Do not cut into the meat
  3. Rub the mix onto the meat portion only of the pork belly
  4. Rub the salt onto the skin only
  5. Let set overnight in the fridge in an uncovered container
  6. Pull the meat out of fridge and let it rest at room temp
  7. Preheat the oven to 425 degrees
  8. Place a baking rack large enough to hold the pork belly into a baking dish with sides (this will collect the fat that renders off during the roasting)
  9. Place the pork belly, skin side up, onto the rack
  10. Place the the baking dish, rack, and pork belly into the oven on the middle oven rack (not too low or too high)
  11. Roast for 30 minutes @ 425 degrees
  12. Remove the pork and examine the skin.  It should be getting puffed & crispy.  In areas where it is not crisping, poke holes into the skin only with a sharp skewer or knife
  13. Reduce oven temperature to 400 degrees
  14. Roast for additional 45 minutes @ 400 degrees
  15. Remove the pork and repeat step 12
  16. Roast for additional 45 minutes @ 400 degrees
  17. By now the skin should be completely puffed & crispy.  If not, repeat step 12 one more time
  18. Place under the broiler for 5 minutes if skin is still not crispy
  19. Remove the pork and let cool for handling and chopping
  20. Use a meat cleaver or large butchers knife to chop thru the crispy skin and meat into serving sizes
