1 head garlic
1 tablespoon coconut oil, melted
3 cups cooked quinoa
½ cup red onion, chopped fine
½ cup red pepper, chopped fine
1 teaspoon lemon juice
1 teaspoon sea salt
¼ teaspoon fresh ground black pepper
½ teaspoon fresh thyme
