1 bone-in leg of lamb, about 5 lb.

For the marinade:
4 large garlic cloves, crushed but left whole
2 Tbs. kosher salt
1 Tbs. ground cumin
2 tsp. ground coriander
Zest of 2 lemons
Zest of 1 orange
2 tsp. red pepper flakes
