Roasted Rainbow Carrots Recipe

Notes: 

These carrots can be cooked with the skin on! Though make sure to give them a good scrub to get dirt off.

Ingredients: 

1-2 pounds Rainbow carrots
1-2 tablespoons olive oil
1/2 teaspoon kosher salt


  1. Preheat oven to 425 degrees
  2. Rinse and scrub carrots, removing longer stray hairs. cutting off long tops. Thicker carrots should be cut in half or quarters--the goal is to have a similar size for all carrots so they cook evenly. 
  3. In a bowl, toss carrots with olive oil and salt so that they are even coated
  4. Spread carrots on a sheet pan in a single layer. 
  5. Roast, stirring every 10 minutes, for 20 to 30 minutes total, or until the carrots are very tender and outside is slightly carmelized/brown
