3 large sweet potatoes (about 3 pounds total), peeled and cut into 1/2-inch cubes
3 large portobello mushrooms (10 to 12 ounces total), stems removed and sliced 1/4-inch thick
1 pint grape tomatoes, halved
2 large yellow onions, thinly sliced
2 tablespoons water
8 large whole-wheat tortillas
1/2 cup basil pesto
3/4 cup grated Parmesan cheese
Kosher salt
Freshly ground black pepper
