Rolled Spinach Pork Loin

Ask the butcher to cut the roast (1/2 inch to 1 inch thick)

Ingredients: 

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 10 ounce frozen chopped spinach, thawed and well-drained
8 slices bacon, crisp-cooked, drained, and crumbled
1 cup grated Parmesan cheese
1 3 1/2 pound boneless pork center loin roast
