Salmon with Lemon Cream Sauce Recipe

Looking for a delicious meal for two? How about salmon with lemon cream sauce, served with a side of farro and roasted Brussels sprouts? The citrus-infused, creamy sauce goes great with fish, whole grains, and a variety of veggies.

Ingredients: 

12 ounces Brussels sprouts, trimmed and quartered
1 T olive oil
salt and pepper, to taste
½ c dry farro (whole not pearled, if possible)
¾ lb. frozen salmon, with skin, thawed (two fillets)
¼ c heavy cream
¼ c sour cream
⅙ t lemon zest
½ T lemon juice
½ T fresh dill, plus more for garnish (if desired)
