Salted Caramel Popcorn

Notes: 

We developed this based on a Gordon Ramsey Video. Tastes great and no bake!

Ingredients: 

1/2 cup unpopped popcorn kernels
1 tablespoon oil
4 tablespoons butter
2 cups sugar
2 teaspoons sea salt
2 teaspoon baking soda
1 cup whole almonds (optional)


1) Pop the corn, shaking the pan occasionally until the popping slows.
2) In a separate saucepan, over medium heat, pour sugar and without stirring melt the sugar. Once a nice dark brown add the butter and salt. Stir to combine, 3) Once a small of Carmel forms a hard ball in a glass of cold water, add baking soda to the caramel mixture, stirring until you have a thick, even, glossy sauce.
4) Pour the caramel sauce over the popcorn, while stirring the popcorn. Add the nuts to the popcorn at the same time as the caramel sauce. Continue to stir the popcorn and the sauce until it's all well coated.
5) Place carmel corn on a baking tray and spread out to cool.
