Sauces: Bacon Jam/

Ingredients: 

2 lb bacon
2 medium yellow onions, diced*
1 C dark rum
1 C brewed coffee
1/2 C red wine vinegar
1/2 C maple syrup
1/2 C ketchup
2/3 C brown sugar
1 tsp ground cayenne pepper
1/2 tsp cinnamon
1/2 tsp garlic powder
1/2 tsp nutmeg
*If you like it super spicy, add some diced jalapeno peppers.
