1 Cup Sugar
1 Cup Orange or Orange Pineapple Juice
8 Egg Whites or 1 Cup (or equivalent of 4 eggs) Egg Substitue (Egg Beaters)
Choice of dried or fresh fruit ( craisins, raisins, apricots, apples)
1 15 oz jar of Polaner Fruit Preserves (apricot, raspberry, strawberry, etc)
½ Teaspoon salt
Cinnamon to taste
Non stick spray
Cook and drain noodles as per package instructions. Rinse noodles in cold water
While the noodles are cooking, combine Sugar, Juice, Eggs, salt and cinnamon in large bowl. Stir to mix completely and dissolve sugar.
Spray aluminum pan or baking dish (9 ½ x 11 ¾ is a good size) with non stick spray.
Pour cold noodles into pan, add the Sugar, Juice, Eggs, Salt and Cinnamon mixture. Stir to evenly distribute.
Pour dried fruit on top and lightly stir to distribute evenly.
Bake for ½ hour uncovered
Reduce heat to 325 and loosely cover with aluminum foil. Bake and additional 15 minutes.
Melt Fruit preserves in microwave until it is easy to pour.
Pour fruit preserves over kugel and spread to fully cover.
