Sea Food Chowder

Where ever you have Chowder the single most importnat thing is the freshness of the ingredients – if you sit down to a bowl of Sea Food Chowder and it has a strong fish smell then it’s probably not fresh, it’s probably fine but probably not made with fish that was reefed out of the water 10 minutes ago.

Enough Chowder for 4
1 medium white onion finley chopped
1 cloves garlic minced
1 large leek finley sliced and washed well
Spalshette of white wine
500 mls full fat milk
500 mls veg or fish stock
200 grams cooked and flaked salmon
200 grams cooked and flaked cod/haddock
100 grams cooked and peeled prawns
Big handful of fresh chopped parsley
2 medium spuds peeled and diced (about 2cms dice)
4 slices bacon diced
Cream to finished
1 tbs all purpose flour
