Seared Salmon with creamed leeks and peas


Serves 2
2 pieces of high grade Salmon steaks
Butter – a tablespoon of the stuff
Salt and black pepper
3 medium sized leeks finely shredded
1/2 glass white wine
2-3 tbs creme fraiche
100mls fish stock (or chicken stock)
100 grams of frozen peas.
Chopped parsley
lemon juice to taste
