Seitan and Ale Stew


1 tbsp. vegetable oil
1 10oz can seitan (sometimes just referred to as “gluten”)
1 small onion, chopped
1 large potato, peeled and diced
2 carrots, peeled and sliced into semi-circles
2 tbsp. all-purpose flour
1/2 340mL bottle ale of your choice
3/4 cup vegetable stock
1 cup lentils, cooked
1 tsp. dried thyme
2 bay leaves
Salt and black pepper to taste
