5 tablespoons olive oil
2 medium shallots (165 grams) minced shallots
3 cups (470 grams) unbleached all purpose flour
1 1/3 cups (170 grams) grated gruyère cheese
3 tablespoons minced fresh Italian (flat-leafed) parsley
4 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon dried marjoram
1/2 teaspoon celery seed
2 large eggs
1 cup whole milk
