1 1/2 pounds boneless chicken breasts, cut into 2 inch cubes
1 large egg, beaten
3 tablespoons all-purpose flour, or gluten-free flour
kosher salt and black pepper
1 tablespoon extra virgin olive oil, or sesame oil
3/4 cup high quality apricot preserves
1/4 cup low sodium soy sauce
2 tablespoons balsamic vinegar
2 cloves garlic, finely chopped or grated
1 inch fresh ginger, grated
1/2 - 1 teaspoon red pepper flakes
1 bunch asparagus, or broccoli - chopped (see note)
1/4 cup fresh basil leaves
sesame seeds and rice, for serving
