Shredded Beef Stew

2.5 lbs beef roast, chuck or top round
1 large russet potato, washed and cubed
1 medium yellow onion, chopped
2 stalks celery, chopped
2 carrots, peeled and chopped in 1 inch sections
1 packet french onion soup mix
1 bay leaf
2 sprigs fresh thyme
1 sprig fresh rosemary
3 sage leaves, placed on top of roast to be removed later
3 cups water
salt & pepper to taste
2 cloves garlic, pressed or chopped

  1. Place roast in the slow cooker and add the rest of the ingredients to the pot.
  2. Cook on low 7-9 hours or until beef is tender. Add additional water if needed. Shred beef with fork befor serving.
