Shrimp Burrito Bowl

Ingredients: 

Cilantro Lime Rice
2 cups brown rice
2.5 cups water
2 bay leaves
1 T fresh lime juice
2 T chopped cilantro

1T olive oil
1 Red onion, sliced
2 (15.5 oz) cans black beans, drained and rinsed
2 cans diced tomatoes with green chiles
salt and pepper

Shrimp
1 lb. shrimp, peeled and deveined
1 tsp. chili powder
½ tsp. garlic powder
½ tsp. dried minced onions
½ tsp. ground cumin
¼ tsp. dried oregano
¼ tsp. black pepper
3 tsp. olive oil, divided

Toppings
1 Tbsp. red onion, finely chopped
fresh cilantro, chopped
1 avocado, chopped
Sour Cream
Shredded Cheese

optional: guacamole, corn, chopped lettuce, green onions, tortilla chips, hot sauce


Rice

  1. Rinse rice under cold water until water runs clear.
  2. Place rice, water, and bay leaf in a medium saucepan.
  3. Bring to a boil, reduce to a simmer, partially cover and cook until liquid is absorbed, about 25-40 minutes.
  4. Discard the bay leaves
  5. Stir in lime juice and cilantro.

Shrimp

  1. In a bowl combine all the spices with 2 teaspoons of olive oil; toss in the shrimp coating evenly.
  2. Let shrimp stand for at least 20 mins
  3. In a large skillet, heat the remaining 1 teaspoon of olive oil and add the shrimp; cook 2-3 minutes on medium heat on each side or until opaque

Beans/Onions/Tomatoes

  1. Place 2 Tbsp olive oil in saute pan, heat to medium
  2. Saute sliced red onion until slightly soft
  3. Add Black beans and diced tomatoes to heat
  4. Salt and pepper to taste

Serve

  1. Place bed of rice on plate, top with bean mixture, then shrimp
  2. Add toppings as desired. Recommend dallop of sour cream, hot sauce, red onions, shredded cheese, then fresh cilantro.
