Ingredients: 

1 pound fresh or frozen peeled and deveined large shrimp
1/2 teaspoon salt-free Fiesta Lime seasoning blend
1 medium green sweet pepper, seeded and quartered lengthwise
1 1/2 inch slice onion
1/2 of a medium zucchini, cut lengthwise into 1/4-inch slices
3 roma tomatoes, halved and seeded
1 small fresh jalapeno chile pepper
2 rustic white artisan pizza thin crust flatbreads, such as Flatouts brand*
4 light queso fresco and chipotle individually foil-wrapped spreadable cheese wedges
2 tablespoons snipped fresh cilantro
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 tablespoons snipped fresh cilantro
