4 shin of beef on the bone – trimmed of excess fat and sinew
4 carrots peeled and ‘chunked’
1 large red onion peeled and ‘chunked’
1/2 a savoy cabbage, shredded and blanched
750mls good beef stock
Salt and pepper
Fresh rosemary
